Eggless Meatballs (frikkadels) with hidden vegetables

This is an easy, delicious and nutritious supper for fussy eaters and family. Without the egg, some meatballs may breakup during cooking, but I adore those smaller, crispier bits.

Serves 6

Ingredients:

500g extra lean beef mince

2 slices of bread (preferably wholewheat) or 125ml breadcrumbs

3 tablespoons Spice Mecca Sosatie spice

2 carrots peeled

1/2 onion

2 cloves garlic, peeled

3 tablespoons tomato sauce

1 tablespoon chutney

some olive oil to shallow fry meatballs

Flour to coat meatballs

Salt and pepper to taste

Method:

  1. For bread slices, add slices to food processor and blitz until crumbs form.
  2. Add carrots, garlic and onion to crumbs, and blitz until fine. (Add ready made breadcrumbs now if you are using them)
  3. Add carrot mix to mince, together with remaining ingredients. Mix well using a fork.
  4. Roll meatballs (I use about half tablespoon per meatball) and lightly coat in flour.
  5. Shallow fry meatballs on low heat, until browned and cooked through. Be gentle with these, don’t turn too much!

I love serving this with a hearty tomato sauce (with more hidden veggies) and noodles/rice but this is equally good on its own with some veg on the side or on bread! I will post my own hearty tomato sauce recipe soon.

Other variations: add bacon bits and/or onions to meatballs once they are halfway through cooking.
